BERRY MUFFINS

Ingredients:
- 1 1/2 cups of organic brown rice flour
- 1/2 cup flaxmeal
- 2 tsps cinnamon
- 3 tsp non-aluminium baking powder
- 1/2 tsp baking soda
- 1/8 tsp sea salt or Real Salt
- 3 large ripe bananas
- (optional: 1/2 cup fresh pineapple)
- 6 Tbsp unsweetened juice (apple, pear, cranberry, etc.)
- 1/2 cup cold pressed sunflower oil
- 1 tsp natural pure vanilla extract
- 1 3/4 cups mixture of fresh or frozen berries (raspberries, saskatoon, blueberries or blackberries)
- (optional: 1/2 cup raw organic pecans)
Mix all of the dry ingredients together. Thoroughly blend bananas, pineapple, juice, vanilla
and oil in a blender. Add liquid mixture to dry ingredients and stir. Fold in berries and pecans. Bake at 350 degrees for 35 minutes in a stainless steel muffin tin lined with unbleached muffin cups. Makes 12 medium muffins.
